Brown Butter Funfetti Snack Cake
A sprinkled-filled treasure to tuck into lunches boxes and day packs.

This cake is just plain fun - the moist, flavor-packed cake, the snackable size, the colorful sugar bits sprinkled throughout.
I took what I remember about boxed Funfetti cake and gave it my own homemade spin. I say “remember” because it’s been some time since I tasted the store-bought mix. But what I can recall with confidence is that this sprinkle-filled, brown butter cake is gonna blow some socks off.
The crumb is tight while also rich and tender. Dense is often associated with dry cake, but this one is moist even days after baking. In true snacking fashion, it lives up to its name by being portable and easy to consume straight out of hand.
I paired our leveled-up funfetti with whipped buttercream frosting. Think you don’t like American-style buttercream or that it is too sweet and heavy? Allow me to change your mind with just 5-ingredients.
The key is to mix the buttercream beyond the point where it just looks like frosting. You can read (and see) more about the process here.
So what is brown butter and why should we bother?
Brown butter is regular butter that has been melted and cooked until golden. As it cooks, the milk solids separate and toast to take on a warm, nutty flavor.
You can use brown butter in both sweet and savory dishes. Combined with brown sugar, vanilla, and almond extract, it takes your standard yellow cake to a whole new standard.
It’s a total flavor enhancer and the whole process only takes 5 to 8 minutes. You won’t even have to wait for the butter to re-solidify in this recipe. So yes, it’s definitely worth it.
