It’s fall and that typically means lots of celebrations. I’ve been putting out quite a few festive pies and large crowd-pleasers lately, but these cookie bars are easy and utterly delicious. If you want a break from the big bakes, but still crave a nourishing, homemade treat, then go ahead and make these Oatmeal Cookie Bars.
Honestly, what else is there to say? They smell incredible and the maple cinnamon glaze adds flavor not just sweetness. My go-to cookie is crisp around the edges and gooey in the middle, but I’m loving the alternative texture of the oats and thick, chewiness of these bars.
The one “tricky” moment might be browning the butter. I promise the extra 5 minutes is worth the enhanced brown sugar, nutty flavor.
