Chocolate self-saucing cake is a one-dish wonder that we all deserve and need in our lives this season. It is as perfect for a dinner party as it is coming in from the snow after a long ski.
This new-to-me cake satisfies every little cake craving I’ve been having lately. It’s beyond moist and fudgy, quick and easy to assemble, and full of chocolate. The prevalent chill is an easy reminder that winter is still very much here, and this cake is everything cozy and comforting that I want to eat right now.
Have you made a self-saucing cake before? This ‘pudding’ is nothing short of magic. A simple batter is topped with a chocolate sauce of cocoa, sugar and water. In the oven, the cake rises and the sauce thickens and sinks to the bottom. It is meant to be served warm, only needing a dusting of powdered sugar or a short pour of sweetened cream, with its own sauce spooned over the top.
Chocolate, straight up, with a dusting of sugar and a cup of coffee is how I’ve been enjoying this cake lately. Some folded-in frozen raspberries or caramel as the sauce would probably be equally delicious.
Just think - you could be sitting down with warm cake in under an hour. And I bet you already have all of the ingredients on hand. How amazing does that sound right now?
