Sable cookies are tender, buttery French shortbread. Made with only a few ingredients, they are simple and understated yet absolute perfection.
Sable, or sand in French, describes the texture perfectly. The centers are soft and a bit crumbly while the sugar around the edges provides a bit of crunch.
The dough is almost like a blank canvas, yielding to a variety of mix-ins and flavor alternatives. These eggnog versions are heavy on the vanilla and nutmeg, with a splash of rum, if desired.
I could eat a half dozen of these plain, but the frosting takes them up a notch. Just a simple swipe of buttercream with a sprinkling of nutmeg and turbinado sugar makes them cookie-platter worthy.
