Everything I Want to Bake Right Now
These are the recipes I am making first...once I unpack my baking pans.
Hi Bakers! Happy July!
June was a crazy month for us - the end of an unpredictable yet fantastic school year, an atypical heat wave that scorched the PNW, and planning a big family move just across the water. Along the way, we baked some amazing recipes and decorated cakes together in the first of many new online classes.
Over on Bake Club+, we made a 25 layer crepe cake for my birthday and I shared TWO definitive guides for filling and frosting layer cakes. Using minimal tools, and my straight-forward process, you’ll never need to search “how to ice a cake” ever again!

At the time that this newsletter hits your inboxes, all of our belongings will be packed away and loaded onto a moving truck. After 8 years of living in downtown Vancouver, we are heading across the water to North Van. We are trading the walk to the beach for the mountains and city living for a small yard.
I am so excited to cook in the new kitchen and test out the oven. Here are some of my favorite seasonal recipes that I can’t wait to bake all summer long:
Strawberry Peach Pie
Sweet peaches and juicy strawberries star in this peak summer pie. All nestled in an all-butter crust, ripe peaches, blushing apricots, and fresh strawberries are sweetened with brown sugar and a splash of vanilla extract.
Yogurt Olive Oil Cake
This simple, single layer cake is topped with a cloud of sweetened cream and fresh summer raspberries. The use of both olive oil and yogurt keep the cake exceptionally tender and perfect for snacking on throughout these long summer days.
Dulce de Leche Ice Cream
I’ll be surprised if this isn’t the first dessert recipe I make in the new house. No-bake, no-churn, and no-fuss, this Dulce de Leche Ice Cream is full of brown sugar, vanilla, and caramel flavors. Made with only TWO ingredients and almost zero effort, I can’t wait to stock the new freezer with this creamy treat.
Strawberry Chiffon Cake
Berries and cream have never tasted better than when paired with fluffy chiffon cake. A cross between a sponge cake and oil cake, this chiffon is soft, pillowy, and the perfect vehicle for summer produce.
Sweet Cherry Pie
This quintessential summertime treat is made with fresh cherries, tart raspberries, and an all-butter crust. Vanilla ice cream optional, but highly recommended (or try it with a scoop of the Dulce de Leche!).
Lemon Zucchini Cake
Turn an abundance of summer squash into this moist spice cake. Slathered in a tangy goat cheese frosting and drizzled with lemon glaze, you’ll be eating this cake from breakfast to dessert.
Strawberry Snack Cake
Left on the counter for all-day grazing or served at your next picnic, this snack cake will disappear before you know it. This single-layer sheet cake is made with olive oil and studded with lavender macerated strawberries. Top it with whipped cream before stuffing it straight into your pie hole.
