Imagine yourself on an island - bare feet padding along the sandy shore, cool water crashing at your calves, warm breeze tangling your hair - the works. This pie is just that - tropical, sweet and creamy but pleasantly tart and refreshing with a slightly salty, sandy crust to match.
This Passion Fruit Lime Pie is my desert island pie. If I’m stranded on said island, this is the pie I want to eat every day. It’s like sunshine on a plate.
Minus all the juicing of those itty bitty limes, Key Lime Pie is actually ridiculously easy to make and comes with great rewards. It is so creamy and delightful without feeling heavy and rich. You think custard pies wouldn’t be considered refreshing, but all the citrus juice makes it tart, tangy, and perfect for summer.
For this recipe, I replaced a large portion of lime juice with passion fruit. For me, passion fruit is a TOP 5 flavor/ingredient. I love the perfect sweet-tart balance.
