What do pumpkin desserts taste like? And why do we love them so much?
To be honest, pumpkin puree is pretty mild in flavor. It’s usually more about the warm spices that it is paired with and the coziness of the season that make us obsess over our favorite pumpkin cakes and coffee drinks.
Roasting and pureeing your own squash can draw out more flavor, but don’t underestimate the power of a can of pumpkin. Here are some of my favorite pumpkin cake, donut, and bread recipes to make before it’s too late:
Pumpkin Mini Loaf Cakes
Chocolaty, nutty, streusel, or swirled - why choose one when you can have them all? The base recipe makes three different Pumpkin Mini Loaf Cakes. Fold in your favorite add-ins and top them with crumbles, crunchies, or creamy finishes.
Pumpkin Cake with Coffee Cream Cheese Frosting
This 6-inch Pumpkin Cake is made up of two layers of super moist, pumpkin spice cake with coffee cream cheese frosting. Think of all of your favorite Pumpkin Spice Latte flavors, but as a layer cake!

I created this Pumpkin Babka Wreath for my friends at E.D. Smith. The pillowy, pumpkin dough is slathered in chocolate-hazelnut spread then sprinkled with chopped hazelnuts and dark chocolate. It is then rolled, twisted, and wrapped into a wreath before baking.
Pumpkin Snickerdoodle Ice Cream Sandwiches
These Pumpkin Snickerdoodle Ice Cream Sandwiches are made with chewy, not cakey, cookies that are perfect for sandwiching with vanilla ice cream. Rolled in pumpkin pie spiced sugar, the wonderful mix of textures from the crunchy coating, chewy cookies, and cold ice cream make the perfect fall dessert.

Salted Caramel Pumpkin Donuts
Warning: these Salted Caramel Pumpkin Donuts can get a bit sticky, but in all the right ways. I love them freshly glazed, but waiting until the glaze sets makes them easier to scarf down. Finger-licking is totally appropriate.
