I didn’t bake any new in-your-face Halloween desserts this year, but this recipe is frighteningly good. I believe my exact words after the first bite were “Oh, no!,” because they were so delicious and bound to be totally addictive.

I covered my bases early this season with this Pumpkin Spice Latte Cake and Caramel Apple Puff Pastries, but once I got the idea of baking marshmallows into a cookie bar, I could not shake the craving. This evergreen recipe is one you can make all year long. But something about the melty marshmallow is giving me cozy, fall feels and just seems right this time of year.
My kids will tell you that this is the best recipe I’ve ever made. Talk about high praise! They are my ultimate taste-testers - unafraid to tell it like it is.
Totally believable though, right? Just look at that gooey marshmallow and melty chocolate and tell me you don’t want to dig right in.
Homemade marshmallow fluff spread between layers of my favorite chocolate chip cookie dough is just as good as it sounds - perhaps even better.
I feared they would be too sweet or annoyingly messy to enjoy, but neither were the case. Wait until they cool a bit before slicing to give the marshmallow a chance to set. It’s actually more of a meringue. A faux fluff, if you will. And it stays gooey and soft in the center even days after.
