Bake Club+ : Vanilla Mascarpone Crepe Cake

I’ve been wanting to make a mille crepe, or crepe cake, ever since I had a heavenly slice on my last trip to NYC to promote my cookbook back in 2019. It’s my birthday this week, so I figured it was definitely time to finally make one for myself.
Thin, delicate layers of crepes are filled with whipped mascarpone cream to create this 25-layer cake. It does take some time standing in front of the stove, but the melt-in-your-mouth bites and ruffly edges are totally worth it.
