I saw that kids in my home state are back to school this week, but I am still enjoying the warm temps and all that summer has to offer. How about you? Whether you are headed to the classroom or still on break, your immediate future should definitely include homemade blondie ice cream sandwiches. They are cool, chewy, and creamy with a snappy chocolate shell.
The ice cream truck has his target market dialed in around my neighborhood. He’s shown up after my daughter’s dance recital and my son’s soccer camp - challenging the willpower of parents at dinner time. I have to remind the family that "we have food at home,” and in this case - we really do!
The key to a good ice cream sandwich is having the cookie or “bread” of the sandwich not be so hard that it’s difficult to bite through. So often the cookies freeze solid and the ice cream gets squished out with each bite. These are not totally immune to the squish factor, but using thin, chewy blondies on the outside is a superior textural experience and better than anything the ice cream man is selling.
These ice cream sandwiches are decadent and delicious. They are delightfully messy and taste even better enjoyed outside on a fun-filled summer day. I love the caramelized, brown sugar flavors of blondies that pair so well with almost any ice cream flavor and the chocolate coating.
For this recipe, I skipped the homemade ice cream. It seemed like asking you to churn your own would keep people from feeling like they could make these right away. Personally, I am no ice cream pro, and this is one item where packaged might even be better than homemade. If you enjoy making your own ice cream, then totally go for it! But do make your own magic shell. It’s so easy it feels like - well, magic!
